Pork with Apple, Ginger and Sage

Nice way to sweeten that pork steak and add some creamy sauce.
Course Main Course

Ingredients
  

  • 1 tbsp Cooking oil
  • 1 Pork Steak – 600g
  • 2 Eating apples, peeled, cored and sliced
  • 1/2 Juice of half a lemon
  • 1 tbsp Honey
  • 2 tsp Fresh root ginger, grated
  • 1 tsp Sage – dried
  • 2 knobs Butter
  • 100 ml Cream
  • 100 g Mushrooms – quartered

Instructions
 

  • Preheat the oven to Gas Mark 4, 180˚C (350˚F)
  • Heat the oil in a frying pan.  Cut the pork into 1cm slices, season with salt and pepper and add them to the pan. Brown for 2 minutes on each side then remove from the pan to an oven proof baking dish.
  • Add a knob of butter to the same frying pan, add the chopped mushrooms and fry for a couple of minutes. Add to the pork when ready.
  • Add another knob of butter to the same frying pan, add the apple slices and cook for a minute. Mix the lemon juice, honey, ginger and sage together in a small bowl then add it to the frying pan along with the cream.
  • Simmer for a minute or two, then pour over and around the pork chop. Cover the dish and place in the preheated oven for 40 minutes.
  • Serve over mashed potatoes.
